Chilled creamy overnight oats with a berry compote

Ingredients

  • 50g oats
  • 250ml almond milk
  • 100g fat free Greek Yogurt
  • 50g Blueberries
  • Stevia to taste

Method

  • Mix oats and milk well and microwave for 2:30, stir and microwave again for 2:30
  • Add additional liquid if required
  • Leave to cool slightly and add Greek Yogurt (you can add sugar free flavouring at this point)
  • Leave to cool in the fridge overnight

For the Compote

  • Add the berries & stevia to a microwaveable dish and microwave for 1 minute, check the berries have broken down and formed a liquid
  • Add the berries to you oats and enjoy

The oats can be immediately eaten if you prefer them hot
