Easy Omelette

If you struggle with vegetables and protein in your diet, an omelette a simple, inexpensive and quick option to help meet those requirements


  • 4 x Eggs
  • 100ml semi-skimmed milk
  • Vegetables (can be anything)
  • Spray light
  • Salt & Pepper to season


  1. Cut up your vegetables (I have used peas, tomatoes, pepper, courgette & mushrooms in this particular omelette)
  2. Turn on your grill
  3. Whisk up some eggs and milk and season (there’s 4 in here with 100ml semi-skimmed milk)
  4. Spray a non stick pan with 1 calorie spray (no need for any oil as this will add unnecessary calories)
  5. Fry veg until slightly softened (this will continue to cook as the egg does)
  6. Add egg mix over veg and cook for a minute or so on hob (don’t stir)
  7. Place your pan under the grill until cooked (around 5-10 minutes)
  8. Tip upside down on your plate and voilà! Your omelette is ready

This Omelette:

top tip:

Use a larger pan and more ingredients to cook for more than one person, or save some for a meal the next day
